The short answer
It depends on the preparation and repairs the floor needs, the system, its thickness and the temperature on site. Of the common systems, MMA cures fastest, so it suits areas that cannot close for long.
Preparation is part of the time
Removing old coatings, diamond grinding and repairing cracks happen before any coating goes down. A floor in poor condition needs more of it.
Each layer has to cure
Primer, body coat and topcoat each need time before the next layer, and the floor needs time before foot traffic and longer before heavy traffic. Cold weather slows curing.
Ways to keep downtime short
Split the floor into areas so the rest of the site keeps working, plan the work around your hours, and choose a fast-curing system such as MMA where an area cannot close.
Ask for it in writing
Before work starts, ask which areas will be out of use and for how long. It belongs in the plan for the job.
